Irish Soda Bread Scones (From Simply Scones)
2 cups all purpose flour
3 Tbsp light brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp caraway seeds
1/2 tsp salt
⅓ cup unsalted butter, chilled
½ cup buttermilk
1/4 cup raisins or currents
Preheat oven to 375ºF. Butter a baking sheet.
Combine dry ingredients in a large bowl (flour through salt). Cut the butter into 1/2 inch cubes and toss them with the flour mixture. With two knives held crosswise (so they look like scissors), cut in the butter until the mixture is lumpy and crumbly looking.
In a separate bowl, mix the buttermilk and egg. Stir into butter/flour mixture – it will be sticky! With floured hands, knead in the currents or raisins.
Pat the dough into one large circle and cut into individual sections or shape into 6 to 8 individual scones. Bake for 20-25 minutes, until done. Let cool on a baking rack for a few minutes, and enjoy warm or cooled. You can freeze them too, if you don’t eat them in five minutes.
